When eating the bread, Jesus wants you to think of his body, that is broken for you. You are correct, he doesn't want you to imagine you are eating a chunk of his bicep.
When drinking the wine, Jesus wants you to think of his blood, which was spilled for you. He doesn't want you to think you are taking a swig of arterial blood.
Although the cathylicks have perverted this, through interpretation of the recount of the last supper in John.
John 6:53 Then Jesus said unto them, Verily, verily, I say unto you, Except ye eat the flesh of the Son of man, and drink his blood, ye have no life in you.
54 Whoso eateth my flesh, and drinketh my blood, hath eternal life; and I will raise him up at the last day.
55 For my flesh is meat indeed, and my blood is drink indeed.
56 He that eateth my flesh, and drinketh my blood, dwelleth in me, and I in him.
If you wanted to drink blood and eat real people, these verses might lead you to believe that it's ok... but it's not.
