Should we forgive our wives before or after we beat them? My wife ruined a pot roast last week and I was afraid she was forgetting her Biblical role in our house, so I was compelled to correct her- but I was concerned about when in the punishment process I should forgive her.

No, by correcting you are showing your loved one you really care. Words flow in one ear and out the other, especially if it is a female. A good bruise lasts for weeks.
I feel if she accepts her correction, she may have earned some forgiveness. If I provide forgiveness, it is after the weeping has ceased and the problem 100% rectified. If she is being especially ornery, I might consolidate all the incidents and multiple corrections, following up with a single forgiveness, say at the end of the month. A man only has so much energy.

If she does not seem 110% repentant, then the problem is you, not her. You have a responsibility to ensure she fully agrees with your statement of the error of her ways. It does not matter if she thinks was is right, it only matters what you think. She must arrive at the point where all she can blubber is 'I am so sorry' or falls asleep/passes out.
Keep in mind too, you will not find out about all her transgressions. I find it handy to wake my wife from a sound sleep and scream "How dare you!!!" and work with her until I get an apology. You may not account for all the missed times but at least she'll realize she cannot get away with them.
The bottom line is, get involved with her life, share, show that you care. It is the corner stone of a solid marriage.

Great advice. Currently, I discipline my wife with my belt, and occassionally, my hand. Do you know who I could go to about advice on the best discipline devices or spanking rods?

Now what kind of a question is that? You do have your handbook, the KJV 1611 Bible, what does it say?
It is clear, the rod must be strong enough to draw blood as we see here in Exodus:

But God does not define what we should use. Not yet anyways.
In Jeremiah, God suggests the branch of an almond tree

I do not know about you, but they are really quite soft and more suitable for a boy to use on a girl when courting.
God realizes how soft almond branches are and refines the thought somewhat in Genesis:

Now, green poplar does not break but it is a soft wood, really more suited towards infants and small children. Now we are getting somewhere!
In Ezekiel, God realizes the branches from nut trees may not work:

Obviously wood does not last and what if the wife sets the kitchen on fire and your rod is in there. Such a quandary!
In Numbers, you can see God intends your rod to be strong enough to destroy stone:

But God does not define the material. Did He expect us to guess what material was strong enough to crush stone?
In calming Psalm God gives a good hint:

Ah, 'Iron', maybe that is what we need!
In Relevation, God 'nails it down with these two fine passages:

Well that settles it, the rod should be made of iron. See how simple God makes it? Now like most men, I really enjoy holdng on to my rod, swinging it about with a firm grip.

Don't speak without permission.
Keep your looks up for your Husband.
Allow Him to marry as many wives as He wishes.
Never disagree with Him. He is wise and we are dumb.
Never enjoy intercourse and never say no to Him.
Allow Him to punish you as He sees fit. Thank Him for it after.
Have every meal on the table in time. Make sure it's warm.
Give up any financial rights you may have to Him.
Accept that you are property and can be sold, whipped etc.
Give up your daughters to your visitors.
Never leave your house unless for DIRE necessity. Life or death.
Do not watch tv. Your only entertainment should be cooking and reading the Bible. Maybe sing if your Husband allows.
What you want doesn't matter. Your sole purpose is to please your Master.
Prostrate to Him whenever He walks into a room. Crawl to Him and kiss His feet until He asks you to stop.
Offer Him your body as a means of letting Him get out His frustration on you, His servant through corporal punishment or other means.
Pray to God every day to understand the limitations of a woman and to better serve your Lords.
Understand that you have no right to anything not even your children. They are His to do with as He sees fit.
Let Him beat you in front of the children if necessary, especially to instill in His daughters and Sons the position of a woman in His house.
