It just seems completely irrational to believe that there is an all-knowing, immortal being with infinite power.

Very good. As you don't have any proof, then two questions remain:
-Who has the burden of proof? Who has presented an extraordinary claim and has to support it?
-Faith or logic?
About point 1. In this site, the burden of proof is on you. We believe, you are trying to change us. If I were to your house, burden of proof would be on my side. You don't believe, I want you to, I should present proof.
We True Christians have proof: Is the Bible. You can read it and decide whether what is said there is real or not. And that is why if we show on your door, we show ourselves with a Bible in hand.
About point 2. It is not if your brain is based on logic or faith. I can be very logical while I still keep the faith. And you, for all I know, have faith that a God does not exist. As you cannot prove it.
There are better arguments even among atheists on why you should or should not believe in a God.
Let's take this argument out of the God I believe in. Let's talk about Allah. You cannot prove Allah does not exists either. I cannot, certainly, other than my God saying there are no other Gods.
So I believe Allah does not exists. And muslims believe he exists. Are we tied? Not really, no. The odds of him existing or not are not leveled. As there is no real world evidence of the existence of Allah, not something we can see in the real world, we can say the chances of him existing are close to zero. We cannot prove he does not exists, but the odds are similar to if we think if a giant monkey living in the dark side of the moon is true or not.
Of course, when they try to apply the same logic to our God, we have the Bible to defend the existence of our Lord. This, in our eyes, puts the odds at 110%. Yes, He does exists, we have His word to prove Him true.
