Tips on the perfect bird -

Sisters! I've been tasked this year with doing the turkey for Thanksgiving. I've never cooked a turkey before so I could use your wisdom.

Depending on the size of the bird, I have been getting very good results using cast iron things with lids placed in a slow oven for several hours, then browned on a cast iron baking tray with extra salt sprinkled in a hot oven until ctisp (20 minutes or less). Some shown in another thread

(The large one in Mr. Dewitt's post I would normally bury in a campfire, filling the lid space with hot coals - if cooking outside. But they are (available up to) quite big and would hold a turkey up to 30lbs; I'd just put it in a normal oven I think, then turn out onto baking tray to brown)
Hope that gives an idea, and I'm sure there will be other excellent suggestions.

Are you an orphan? Your mother should have been teaching you this every year since you were a child. Or, your father might have shown you how to deep-fry a turkey. Just be careful not to burn the house down, again.

My ma always messes the turkey up, mister Nobar, I'm not sure how she manages it but last year it was all burned on the outside and undercooked in the middle. The year before it was done on one side and raw on the other side. Daddy always corrects her but she just never gets it right.
This year it's my job and I'm praying that I don't mess it up, I knew the Ladies of Landover would be able to help me so I thought I'd ask.

I think the young lady really needs tips on the cooking; how to achieve breast tenderness to a degree where the guests can actually get a feel of the juiciness and get their own juices flowing with mouth-watering efficiency, just how much thigh, where and how to squeeze the stuffing in, should the legs be tied up, etc and so on.
I'm totally ignorant of all that type of thing, so COME ON LADIES, GET YOUR TIPS OUT!

Totally agree with that, It's the Breasts that get my juices flowing too, Sometimes I like the legs tied but they must be tied open if you get what I mean then the stuffing is made a lot a lot easier.

Gosh Miss Annie! First off, congratulations! Your domestic prowess must be coming along nicely for you to be given such an important task.
Now. Sister Mitza is correct. It does depend on the size of the bird so if you could share just how many pounds the one you are to cook weighs, it would be helpful.
There are other things to take into consideration too. What kind of stuffing are you making to fill the cavity? Are you making all the fixin's to go with the bird as well?

Praise God for his gifts at Thanksgiving!
In the Porter home, we only care for the best of the white meat. As usual, we will buy two 20 pound fresh birds, carve the breasts out of them and throw the rest away.
Then it's just a matter of loosely wrapping the 4 pounds of breasts in foil and baking at 325 degrees until safely cooked, praise Jesus!

The lidded iron "camp oven" or one of the large enamelled ones WITH A LID ON will ensure even cooking. I find it is better for a bird to remain not trussed up so that the heat can reach all places equally, and prefer stuffing done with nuts.
Chestnuts - can make a lovely paste for the breast: try and get it in as close to the wishbone as you can
Brazil nuts can moisten a dry bird - try and get plenty squashed up together inside. These have been cultivated for some time now and the quality is improving all the time. I don't know why Brazillians grow things so hard, but rely on it - they will be!
Cashews are one of my fave stuffings: mix with shallots. I don't normally use herbs much. I've tried quite a few varieties over the years, but they always impair the savour of the meat, which I prefer straight. Don't you?

Where and by whom will the bird be killed? I hear getting them drunk first makes for a more tender flesh.
Maybe you could get it drunk (white wine, not red) then let it drown in chicken broth. They do say that drowning is one of the gentler ways to die.
Letting the turkey get high would relax it, pre-decapitation, but only with doctor proscribed morphine.
Telling the bird ahead of time that it only has a few weeks to live could depress it enough to make the kill easier. Just leave a bottle of sleeping pills laying around "accidentally."
Finally, there is always the ninja assassin method. They don't always respond immediately to voice mail, because they are usually so booked up. But I understand they do a great job.
The bird will never know what hit it.

Oven too hot, bird still frozen in the middle when it went in.
Best thing is to keep it simple. If you have your bird already make sure it is fully defrosted (up to 6 days depending on the weight.) If you don't have your bird buy a FRESH BIRD!. In fact, if someone can kill the bird in the next few days and hang it properly (temps between 0C/32F and 5C/40C) that would be best.
make sure you have a good meat thermometer.
Put some butter pats under the skin.
Some cover their bird, I don't.
Stuffing is a personal thing, so use a recipe that your family likes.
Cook at 325 for 20 minutes/pound ~ This is only general though, use your meat thermometer for accuracy. 170F for an unstuffed bird, 180F for a stuffed bird. Make sure that your thermometer is not touching bone. Placing it in the thick part of the breast by the drumstick is best.
Let stand for 15-20 minutes before carving, it allows the juices to settle.
For my family, I want way more stuffing than I could ever get into one bird, so I take the extra stuffing and wrap it in tinfoil with some chicken stock. I then toss the two batches of stuffing together.

That doesn't make any sense at all.
Even I, a man with no cooking experience, have enough sense to know that you tie the legs closed AFTER the stuffing is complete.
