You will recall that bones are distinguished from flesh by God, for example in the following passage:
Genesis 2
23a And Adam said:
23b This is now bone of my bones
23c And flesh of my flesh.
Claims that bones comprise less than ⅓ water are therefore irrelevant to the overall figure.
