Some of the recipes do seem a bit complicated. Most of that "pasta" clip, after the bit about mix eggs & flour (1 cup flour + 1 egg per person) and roll out, seemed to be about gabbling and twiddling the stuff into arbitrary fiddly shapes which when all's said and done are still just eggs and flour rolled out.
When I have house guests the following VERY SIMPLE recipe is always appreciated:
1 leg lamb (or mutton if available)
some vegetables (onion, carrot, potato, parsnip, turnip)
(about equal weight of meat/vegetables)
▸ wash veg. and peel according to taste
▸ put everything NOT CUT UP into a stewpot with salt & pepper
▸ boil for several hours
What could be simpler? The potatoes tend to fall apart a bit as a thickener and the meat comes away from the bone when done. Kept as a hot pot on hearth or hob with a ladle and fresh bread provides a substantial snack for guests at any time.
Sometimes I add pearl barley, but that's not necessary, sometimes a few tomatoes (if in season) but that's not necessary either.
Sprinkle with parsley.
