Duly noted, dear. A few posts above I wrote a detailed reply to your musings. I guess what you're telling me is that I wasted my time. That's OK, my bread was still in the oven so I had a few minutes to spare.

You seem tense. Have you tried baking? I find it soothing.

Cinnamon and raisins whole wheat bread
2 cups sourdough starter, fed 12 hours earlier
3 cups whole wheat or spelt flour
3 cups unbleached all purpose flour
2 and 1/2 cup lukewarm water
2 heaping tsp salt
1 cup raisins
1 tsp cinnamon
maybe 1 tbsp honey? I put 2 and it came out a bit too sweet. Maybe the sugar in raisins would be enough.

Combine starter, flours, and water. Autolyze for 1/2 hour. Add the remaining ingredients and knead for some 20 minutes. Let rise 4 hours. Transfer to buttered forms (I use solid iron), this should be enough for 2-3 loaves. Let rise for another 2 hours. Preheat oven to 450 F and bake approx. 35 minutes.

It's really good, you should try it!
