What's your favorite squirrel recipe? -

I was hoping to share some of my favorite squirrel recipes with our new squirrel-loving friend, but his intro thread got closed.
Squirrel in Cider is one of my personal favorites. Widow Helen makes it at least once a month, and she agreed to share her grandmother's recipe with the Ladies of Landover.

Squirrel in Cider
Skin, clean, and disjoint 3 plump squirrels. Soak the pieces in cold salted water for 20 minutes, wipe dry, and dust with flour seasoned with salt and pepper.
In a heavy skillet sauté 1/4 cup diced fat ham until browned. Add the squirrel and brown the pieces well on all sides in the ham fat.
Add enough hard cider barely to cover the squirrel, cover the skillet, and simmer until most of the liquid has evaporated and the meat is tender.
Add 2 tablespoons butter, increase the heat, and quickly brown the pieces of meat once more. Remove the squirrel to a warm serving platter.
To the juices remaining in the skillet add in 1 cup hot cream and stir in all the brown bits from the bottom and sides of the pan.
Stir in, bit by bit, 1/2 tablespoon flour mixed to a paste with 1 tablespoon butter, correct the seasoning with salt and pepper, and strain the sauce into a gravy boat. Serve the sauce separately.

I'm not sure Rev. ... If we were to believe the Darwinistas, squirrels are very closely related to rats. (yeah, sure )
Not that I believe their hoopla for even a split second, but I dunno, I don't really want to taste it. Fluffy tail or not.
Gimme a good Christian meal like a steak or a pot roast anytime!
PS: I like shooting them though. They really explode in a funny way when you hit them with expanding bullets!

I just toss them alive right into the barbeque. You have to close the lid really fast, though.

As the squirrel body is on the small side, like the Cornish Game Hen, I think stuffing them rounds them out a bit.

Ladies have to remember that the squirrel species is a canny, vile, mouthy, devious one...with a BAD attitude. If cornered, they can run up your dress in fright!
If you're not a "sure shot," be sure to have a male relative gather the squirrels for you.

Put them in the crock pot with some onions, bell peppers, celery, and garlic, and stew them.

Amen to that brother. Squirrels are nice for target practice for kids and to have fun with while they try to escape the fire. But eating them, no thank you.
God teaches us everything that moves can be eaten: Genesis 9:3 "Every moving thing that liveth, shall be meat for you.". I mostly prefer to eat bigger animals but I also have a sweet spot for crunchy spiders. They taste quite well and the look on my grandchildren's faces when I eat them is priceless. And the look on their faces when I explain Genesis 9:3 to them and force them to eat some spiders as well is even better.

A good project for children is to have them help you make Squirrel Napkins to serve with the squirrel stew that's simmering. 1 pot of stew takes about 5 (healthy) squirrels, and 5 tails make one napkin. Leather cord gives a nice "rustic" look to bind them together, and it's easy for small fingers to work with.
Until such a time as you have enough "napkins" to go around for everyone at the table, you can use them as trivets or warmers when you put the pot of stew on the table.
Another way around an incomplete set is, Serve the men alone at the table and let them have the squirrel napkins you have, and feed the women and kids in a different room, without.

I am a little concerned. Squirrels seem to be somewhat similar to rabbits--in that they both fall into the bothersome "varmint" catagory--and I know that rabbits are "unclean" according to the Word.
Are you SURE that squirrels are okay to eat? Or to wear, for that matter? Or to stuff and make dance around in little pantomime plays?
