As for Spanish. Well, first of all, there are different languages in Spain: Valencian, Basque, Catalan, Galician, and - last but not least - what kids in school learn as Spanish. So in some Latin American countries people refer to the last language as castellano, since it originates in Castile-la Mancha.
Second, as Brother Gonzalez has mentioned, there are plenty of varieties of castellano. I've not heard a person not living in Spain using vosotros; people in each region have a different way to pronounce "ll;" there are words which mean different things in different areas (such as wawa/guagua*, which depending on the area means a baby or a bus); and also there are words which are unique to a specific area (for example llajua/llajwa**, which is the best human invention since agriculture).
