I have got to say, what you are saying is preposterous. Scientists have proved that atoms exist, theory is something that is 99.9999999% true, we think that it is almost certainty true, but is is subject to amendment, like any piece of work. You are stupid to be thinking that because a book written in the 15th century says something, that something must be true. You must be out of your mind to think this, obviously under the control of Satan.

I simply want to see more proof of them before I go and accept something just because scientists say so.

Proof of atoms:

• The existence of atoms having a fixed ratio of compounds - water made up of 2 parts (Hydrogen and Oxygen) - no other way to combine them.
• The logical answer - if atoms aren't true, why would that be true?
• Rutherford's Experiment - fired alpha particles at a very thin sheet of gold foil. They passed straight through the foil, but a few were reflected as they passed.
• Can you explain the Rutherford's observation in the context of matter being made of infinitely divisible things.
• Nuclear reactors and Nuclear weapons - designer around the premise of actual atoms. (worked perfectly)

I'm sure this won't convince you, and whenever somebody like you becomes convinced that scientists just sit around and spout out crazy theories", it's unlikely you'll be convinced by any amount of reason.

The fact remains that it is a theory, and it is a theory because it is as yet unproven.

A theory can never be proven. However, when a theory is supported by lots of positive evidence, it is no longer reasonable to doubt it.
