Your father has already mentioned that the young man refuses to eat any apple pie that isn't made by his mother or grandmother, so to avoid the embarrassment of having to be disciplined in this social setting perhaps just bring what he's asked for. It's great to see you're making your own pastry.

HANDY HINT I use different types of flour for different fillings. Some flour is quite sweet (if you ask in the shop they'll let you taste it before buying) and I use that for fruit. Coarser flours have an earthier note on the palate (from different varieties of wheat) giving a very satisfying result with the meat.

Keep the conversation chaste so he'ill see you're ashamed and once your father's guest recognises just how frightened of him you are, who knows? Perhaps your father will be able to inform you of your betrothal sooner than you think.

I also have some great news...he called earlier today to ask me to bring a key lime pie and a chocolate pecan pie, along with a plain pie crust so he can try it.

@Mitza: Oh my, I completely forgot about his refusal to eat any pie that was made by someone other than his mother or grandmother! I was looking through the list of recipes, saw the apple pie one that I included for future reference, and found myself thinking of a family saying about how every good wife should know how to make an apple pie, even if her husband doesn't like it. I think it would be nice to have varieties of the different recipes.

Thank you for your prayers, everyone! No engagement yet, but based on the compliments that Andrew (the young man) gave me about my pies, things seem to be quite promising.

He had one slice of each pie and the equivalent of two slices of my pie crust. He tried the key lime pie first and said that it was "perfect". After trying the chocolate pecan pie, he told me that I used the right amount of pecans in comparison to his family members, who apparently use too many or too little.

I was very nervous when he tried the pies, but I was even more nervous when he tried the pie crust. Andrew ate the first piece and immediately asked for another piece. I still can't believe what he said when he finished the second piece. He told me that my crust is flakier and tastier than his mother and grandmother's crusts. I almost passed out, but I managed to nod and thank him for his compliment.

When he and his family left, he told my father that he is more than willing to keep in contact about a possible marriage.

I apologize to the men for rambling, but I'm so excited.

Oh, Esther, my heart filled with joy as I read your account of Andrew's tasting. It sounds quite promising. How did you manage to maintain your composure when he complimented your flaky, tasty crust above that of his mother AND grandmother? Your heart must have been all aflutter and surely you were almost in a tizzy! Andrew seems to be a very wise person since he didn't jump into anything.

I hope when he calls again (and I just know he will, now that he has the scent of your pie) that you will pull out all the stops! You simply must have more of the pie that you prepared this time waiting for him - and then just fill him with compliments about how strong and wise he is. Be sure to let him choose the topic of conversation and listen with wide eyes (downturned a little - you don't want to be forward) to his every word. If he ignores you in favor of conversation with your father, this is a good sign! After all, you'll likely be ignored for much of the time you are married anyway, Praise God! Oh, how blessed it is to be a woman.

I am keeping my prayer vigil going for you. I so hope he requests another date soon. And you better keep us posted or we will be knocking at your door daily!

Thank you, Naomi, for your continued prayers. When Andrew complimented my pie crust, my heart stopped for a moment and my face got really warm. I don't think I can describe how much self control it took to not make eye contact with him when I thanked him for the compliment.

Congratulations, Esther dear! I must say that Andrew sounds like a remarkably thorough young man, checking the crust as well as the pie.

Just 2 things: with a name like Andrew, I hope he doesn't have any Scotchman in him? They are prone to throwing sticks and wearing skirts (without any underwear ), both of which might prove a bit wearing on the nerves.

My father took me to a nearby fabric store on Saturday and I picked up some lovely pink satin and some white satin ribbon. I started making my dress on Saturday evening, but I haven't worked on it since then because yesterday was the Sabbath and I was not going to risk God's wrath by working on the dress so it would be done by today.

In case anyone is wondering, it will stop below my knees and the sleeves will stop at my elbows. I might post a picture when it's finished.
