That quote is merely asking you to assume that unit M1 is the Earth, and unit M2 is a sphere of 1kg mass. It's not "assuming" anything relevant to the actual equation or the science, it's merely giving a name to M1 and M2 for the purpose of illustrating the argument. I believe it because several teams of internationally accredited scientists, not to mention one of the forefathers of modern scientific method, Isaac Newton, have all shown it to be so. If someone provides conclusive evidence, or I come into such evidence, that shows this to be false, then I will happily revise my beliefs. We live and learn.

And I experience Newton's theses first-hand every day - hey, look, I dropped a cookie, and it was gravitationally attracted towards the centre of the Earth because the Earth is exerting more attraction on objects than anything else at that given moment! SCIENCE!
