Maybe it's because they want to feel like the special snowflake. Following their own unique take on a religion fulfills that need.
As for the second part of your statement. If people can call atheists immoral, misguided as well as make assumptions and so on, that means they're okay with generalizing. Therefore, logic dictates, there should be no problems with them being measured with the same stick and being neatly folded into the Christian category.
