          You may as well eat soap if the Cheddar doesn’t attack the back of your tongue like a salty rasp file. A really good, at least a year old, Cheddar will allow your breath to wilt roses at 3 paces.

                I would say once it walks out of the fridge and says "feed me!!!!" It's too old.

                But seriously, cheese can get to the point that it's unhealthy. It tends to spoil easily......
