Its not whether or not people could build a Biblically correct ark. At the size estimates you give, such a craft would be smaller than your average aircraft carrier. But a ship that size can't have the capacity to hold 2 let alone seven of each type of animal. The king James Bible, the one most accepted here says that 7, not two of each animal was on the ark, this is rather vague. Is it 7 male and seven female, six male and one female, the safest when it comes to the animals might be six female and one male, either way, a boat that size could not fit them.
It does say that there were seven "kinds" so I will simplify animals with species variations into one species (African Elephant and Indian Elephant = elephant). Lets put them in shall we, 7 elephants, 7 rhinos, 7 hippos, 7 bears, 7 crocodiles, 7 big cats (simplified lions and tigers and others into big cats), 7 wolves, 7 antelope, 7 sheep, 7 ostrich. Already pretty full, but this ship would also need to carry food and fresh water for all the animals and the humans. It would also need to carry supplies so the human family on board to rebuild. The ship wuld also need to carry seeds of many plant species to repopulate after the flood.
Another concern of mine, did no one else have a boat at that time. If a single family could make an aircraft carrier size boat, then surely other people would be able to make other boats. If a boat were at sea, it might not even notice the rising waters. If a boat were off the coast of India where sometimes rain can last for 40 days, they would not notice anything out of the ordinary at all.

The Phonetician empire, in existence in 2300 BC, regularly made voyages that could last eighty days or even a few months. A well stocked trading galley headed for India from the Persian gulf could easily survive 120 days or more without resupply. If this happened during the rainy season and they were far enough from shore, they would be surprised when their destination city was no longer there.

As those that refused to heed Gods Perfect Word, no doubt were surprised to find what ever river city they were trying to find, gone. However, being God is merciful, He no doubt sunk those ships during the flood to save them the torture of traveling around and around with no end in sight. I am not saying if or but, i guarantee there were other ships in the ocean at the time. The bible was not written anywhere near India, a popular area for ships, nor does it describe how the coast of morocco handled it. Ships, well stocked ships, would be at sea at the time and they would have survived the flood.
Contrary to popular opinion, Jesus was not born at Christmas, he was born sometime in the spring, a fact backed up by records in the Roman census.
