You ask a reasonable question. The point is that you are overlooking an essential part of Genesis here. It is called the Fall of Man:
Genesis 2:15-17:
And the LORD God took the man, and put him into the garden of Eden to dress it and to keep it. And the LORD God commanded the man, saying, Of every tree of the garden thou mayest freely eat:
But of the tree of the knowledge of good and evil, thou shalt not eat of it: for in the day that thou eatest thereof thou shalt surely die.
Consequently, man disobeyed:
Genesis 3:6-7:
And when the woman saw that the tree was good for food, and that it was pleasant to the eyes, and a tree to be desired to make one wise, she took of the fruit thereof, and did eat, and gave also unto her husband with her; and he did eat.
And the eyes of them both were opened, and they knew that they were naked; and they sewed fig leaves together, and made themselves aprons.
The important part is: here man sinned, while God never sinned. The Fall of Man caused man to become imperfect, which is why man makes mistakes. God, however, does not, and His Infallibility is proclaimed in many different parts of the Bible:
2 Samuel 22:31:
As for God, his way is perfect; the word of the LORD is tried: he is a buckler to all them that trust in him.
Habakkuk 1:13:
Thou art of purer eyes than to behold evil, and canst not look on iniquity: wherefore lookest thou upon them that deal treacherously, and holdest thy tongue when the wicked devoureth the man that is more righteous than he?
Titus 1:1-3:
Paul, a servant of God, and an apostle of Jesus Christ, according to the faith of God's elect, and the acknowledging of the truth which is after godliness; In hope of eternal life, which God, that cannot lie, promised before the world began;
But hath in due times manifested his word through preaching, which is committed unto me according to the commandment of God our Saviour
Hebrews 4:15:
For we have not an high priest which cannot be touched with the feeling of our infirmities; but was in all points tempted like as we are, yet without sin.
1 Peter 2:21-22:
For even hereunto were ye called: because Christ also suffered for us, leaving us an example, that ye should follow his steps: Who did no sin, neither was guile found in his mouth
2 Corinthians 5:20-21:
Now then we are ambassadors for Christ, as though God did beseech you by us: we pray you in Christ's stead, be ye reconciled to God.
For he hath made him to be sin for us, who knew no sin; that we might be made the righteousness of God in him.
1 Peter 1:18-19:
Forasmuch as ye know that ye were not redeemed with corruptible things, as silver and gold, from your vain conversation received by tradition from your fathers;
But with the precious blood of Christ, as of a lamb without blemish and without spot
So you see, possibly the greatest difference between God and man is that God is infallible.
And again, 2 Timothy 3:16 teaches that the Bible is the Word of God, not of man, so the question is not whether man is fallible (he certainly is) but whether God is fallible (He certainly is not). And as God is omnipotent, He is perfectly able to keep the errors of man out of His Word.
It may be, but I get the impression that you are a potential True Christian™, so I gladly educate you about God's Word.
Well, the questioning mind, as I've tried to make clear, is a result of the Fall of Man, as before that, man simply obeyed God, but afterwards his "eyes were opened," which means that man got the ability to disobey God by "critical thinking," instead of obedience. Faith is a matter of the Heart, not of the brain.

I realize that this sort of thinking is probably what you would deem heretical, irreligious and quite possibly offensive.

But if God exists, and He made me in His image, then He intended me to be this way. With purpose, He made my mind work in a way that questions everything and takes nothing at face value.
